Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

14-69-4    Basic - Ice buildup in reach-in freezer and/or walk-in freezer. -Observed heavy ice buildup inside walk in freezer.
10-20-4    Basic - In-use tongs stored on oven door handle between uses. Operator removed and stored properly.
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. -Observed accumulation of brown like substances buildup on can opener holster.
06-01-5    Basic - Time/temperature control for safety food thawed in an improper manner. Observed gravy thawing at room temperature in kitchen.
36-27-5    Basic - Wall soiled with accumulated grease, food debris, and/or dust. Observed walls at 3 compartment sink solid with accumulation of black mold like substances.
03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. -Observed raw fish cold held at 45F in walk in cooler. Per operator, fish transfer to unit 1 hour prior to the inspection. Operator place ice packs on fish for quick chill. **Corrective Action Taken**
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. -Observed accumulation of black mold like substances buildup on can opener blade.
31A-11-4    Intermediate - Handwash sink used for purposes other than handwashing. Observed hand wash sink in bar used to wash oranges.
16-62-1    Intermediate - No measuring device available for measuring utensil surface temperature when using hot water as sanitizer in a dishmachine. No measuring devices available at the time of inspection.
