Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

51-11-4    Basic - Carbon dioxide/helium tanks not adequately secured. Observed a CO tank not secured at bar area at rooftop pool area.
06-09-1    Basic - Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. Observed ROP tuna thawed in its original package in reaching cooler at Cook line.
24-08-4    Basic - Equipment and utensils not properly air-dried - wet nesting. Observed plastic containers on shelf next to warewashing area wet nesting.
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed fan cover at walk in produce cooler soiled with debris.
12A-07-5    High Priority - Employee failed to wash hands before putting on gloves to initiate a task working with food. Observed employee at cook line engaging in a new task not wash their hands prior to placing gloves on.
01B-13-4    High Priority - Stop Sale issued due to food not being in a wholesome, sound condition. Observed ROP tuna thawed in its original package in reaching cooler at Cook line.
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Observed can opener blade at prep table soiled with food debris at kitchen area. Chef had employee clean blade. **Corrected On-Site**
