A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Dead roaches on premises.
Observed approximately 20 dead roaches behind/on back of fire extinguisher sign on wall in ware washing area in kitchen. Operator removed and discarded sign, cleaned snd sanitized wall.
Observed 1 dead roach on ground outside of walk in cooler in kitchen
Observed 1 dead roach on ground behind corn hole board located in dining room. Operator removed. **Warning**
High Priority - Roach activity present as evidenced by live roaches found.
Observed 1 live roach in between wall and three compartment sink in ware washing area in kitchen. Operator removed cleaned and sanitized
Observed approximately 5 live roaches behind/on back of fire extinguisher sign on wall in ware washing area in kitchen. Operator removed sign and discarded, cleaned and sanitized.
Observed 2 live roaches on corn hole game board locating in dining room. Operator removed from establishment.
Observed 1 live roach on base board behind corn hole board located in dining room. Operator removed.
Observed 1 live roach on ground under rack holding buckets of chips on cook line in kitchen **Warning**
High Priority - Server handled soiled dishes or utensils and then picked up plated food, served food, or prepared a beverage without washing hands. Observed employee handle soiled trays from guest then proceed to handle ice scoop and refill beverages without washing hands. Instructed employee to move ice scoop to ware washing area and wash hands **Corrected On-Site** **Warning**
Intermediate - Water with a temperature of least 85 degrees Fahrenheit not provided/shut off at employee handwash sink. Water of 82F provided at front counter hand wash sink **Warning**
