Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

03A-02-5    High Priority - - From initial inspection : High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Cook make line to far right side of kitchen across from oven: sour cream (48F - Cold Holding); pico de gallo with cut tomatoes (48F - Cold Holding); cut lettuce (48F - Cold Holding); shredded mozzarella (49F - Cold Holding); sliced tomatoes (49F - Cold Holding) Walk in cooler: cut tomatoes (46F - Cold Holding); cooked beef (46F - Cold Holding). Manager opened freezer to assist with cooling product. Recommended installing cooler flaps to help with air flow. Manager called service tech. **Warning** - From follow-up inspection 2026-05-07: Walk in cooler: Cooked pork (45F-cold holding); cooked chicken (45F-cold holding); cooked chicken (44F-cold holding); cooked pepper(45f-cold holding). No temperature monitoring, no temperatures taken today. Operator moved all food to the walk-in freezer. Ambient temperature of walk n cooler is 47F **Admin Complaint** **Corrective Action Taken**
