Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

43-01-4    Basic - Living/sleeping quarters that open directly into a public food service establishment without complete partitioning and/or self-closing doors. In dry storage area of kitchen in between wire racks employee bed set up, discussed with operator. **Warning**
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Evaporator fan cover in walk in cooler soiled with accumulation of dust debris, discussed with operator to clean and sanitize. **Warning**

03D-01-5    High Priority - Cooked/heated time/temperature control for safety food not cooled from 135 degrees Fahrenheit to 70 degrees Fahrenheit within 2 hours. In prep area of kitchen in mini portable ice cooler with cooked rice noodle (82F - Cooling) at 1:30 since 12:00 to 79F at 2:15, at this rate of cooling product never reached 70F within 2 hours, discussed with operator see stop sale. **Warning**
