A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance. Observed ceiling in walk in cooler soiled with dust debris. Observed vents in front of walk in cooler soiled with black mold-like substance.
Basic - Interior of oven/microwave has accumulation of black substance/grease/food debris. Observed interior of microwave at dry area soiled with old food debris. Employee cleaned interior of microwave. **Corrected On-Site**
Basic - No handwashing sign provided at a hand sink used by food employees. Observed hand wash sink at cook line is missing hand wash sign. Chef provided sign. **Corrected On-Site**
High Priority - Displayed food not properly protected from contamination. Observed food displayed at breakfast buffet at entrance of restaurant not properly protected.
Intermediate - No paper towels or mechanical hand drying device provided at handwash sink. Observed no paper towels at hand wash sink at cook line. Chef provided paper towels. **Corrected On-Site**
Intermediate - No written procedures available for use of time as a public health control to hold time/temperature control for safety food. Observed establishment utilizes time as a public health control for items at breakfast buffet at entrance of establishment with no written procedures. Form was provided and filled out at the time of the inspection. **Corrected On-Site**
