Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

Employee touched face/mouth/nose while scratching/rubbing/wiping with hands then handled clean equipment and clean utensils to prepare food for customers without washing hands. 35A-02-7    High Priority - Live, small flying insects found. Approximately 3 live, small flying insects found in kitchen flying around food preparation/storage areas. Advised Operator to eliminate live, small flying insects. **Warning**

35A-04-4    High Priority - Rodent activity present as evidenced by rodent droppings found. 1 rodent dropping in kitchen on bucket of sauce in dry storage area. 1 rodent dropping in kitchen on prep table across from walk-in. 1 rodent dropping behind bar on shelf under tap beer dispenser. Approximately 3 rodent droppings behind bar on floor under ice bin. Advised Operator to remove rodent droppings, clean and sanitize areas. **Warning**

At cook line left side flip top cooler; cut cabbage (48F - Ambient Cooling 1:10/48F 1:40).
