The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.

Advised Operator to remove dead roaches, clean and sanitize areas.

High Priority - Employee touched face/hair and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands.

Approximately 3 live, small flying insects found in kitchen flying around food preparation/storage areas.

Approximately 3 rodent droppings behind bar on floor under ice bin.
Advised Operator to remove rodent droppings, clean and sanitize areas.

High Priority - Self-service salad bar/buffet lacking adequate sneezeguards or other proper protection from contamination.
Cooked rice dessert and candies at self service buffet uncovered/no sneeze guard.

**Corrected On-Site** **Warning**
Intermediate - Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection.
At cook line left side flip top cooler; cut cabbage (48F - Ambient Cooling 1:10/48F 1:40).
Operator stated cabbage cut at 11:00am, cooling in flip top make top, at this rate will not reach 41F within 4 hours, moved to walk-in cooler to facilitate faster cooling.
