Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

10-07-4    Basic - In-use utensil stored in standing water less than 135 degrees Fahrenheit. Observed utensils in water at 124F. Cook placed utensils on top of stove to heat up. **Corrective Action Taken**
38-07-4    Basic - Lights in food preparation, food storage or warewashing area missing the proper shield, sleeve coatings or covers. Observed above ware washing area, lights no shield.
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Hood filters soiled.
22-16-4    Basic - Reach-in cooler interior/shelves have accumulation of soil residues. Observed interior of cooler and walk in cooler, soiled. **Repeat Violation**
14-17-4    Basic - Walk-in cooler/freezer shelves with rust that has pitted the surface. Observed inside walk in cooler and freezer rusted shelves. **Repeat Violation**
36-27-5    Basic - Wall soiled with accumulated grease, food debris, and/or dust. Observed at kitchen. Hood filters soiled. **Repeat Violation**
42-01-4    Basic - Wet mop not stored in a manner to allow the mop to dry. **Repeat Violation**
03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed at cooler drawers , raw beef (70F - Cold Holding); raw chicken (65F - Cold Holding) Placed 2 hours ago, cooler was disconnected accidentally. Operator placed foos items inside walk in freezer for rapid chill, connected cooler. **Corrective Action Taken**
29-34-4    High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Observed hose connected under prep table, next to 2 compartment sink. **Repeat Violation**
41-15-5    High Priority - Wiping cloth solution exceeding the maximum concentration allowed stored in a location that could result in the cross contamination of food, equipment, utensils, linens, single-service, or single-use articles. Observed sanitizer bucket, Sanitizer Bucket (Chlorine 200+ppm) Operator discarded solution and prepared new ones, Sanitizer Bucket (Chlorine 100ppm); **Corrected On-Site**
41-17-4    Intermediate - Spray bottle containing toxic substance not labeled. Observed all purpose cleaner spray bottle, no labeled. Operator labeled spray bottle bottle. **Corrected On-Site**
45-04-4    Use of cooking equipment producing grease laden vapors/smoke with no hood suppression system installed. Notified Fire AHJ. For reporting purposes only. Observed at kitchen, small Frye not under hood suppression system
