Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

06-01-5    Basic - Time/temperature control for safety food thawed in an improper manner. Observed chicken wings, shrimp and tilapia filets thawing in room temperature.
14-17-4    Basic - Walk-in cooler/freezer shelves with rust that has pitted the surface.
36-10-4    Basic - Worn, torn and/or soiled floors/carpeting. Under the soda station, and front counter display case. Observed under fryers, under the storage area and prep tables heavily soiled .
22-12-5    High Priority - Metal stem-type thermometer soiled.
03B-01-6    High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed chicken wings (98F - Hot Holding) stored on the fryers for less than 2 hours as per operator, item was reheated chicken wings (178F - Reheating). Observed shrimp (90F - Hot Holding) stored on top of fryers for less than 2 hours, as per operator. Item was reheated. **Corrected On-Site**
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Observed reach in freezer shelves soiled.
31A-11-4    Intermediate - Handwash sink used for purposes other than handwashing. Observed old food debris in the kitchen handwashing sink.
16-37-1    Intermediate - No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths.
03F-10-5    Intermediate - No written procedures available for use of time as a public health control to hold time/temperature control for safety food. Observed Philiy steak (TPHCF); chicken Philiy (TPHCF) not on the written procedures. Operator added items. **Corrected On-Site**
