Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-32-5    Basic - Ceiling/ceiling tile shows damage or is in disrepair. Observed disrepair ceiling tile in front area above RIC.
36-34-5    Basic - Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance. Observed soiled ceilings in kitchen area and in front counter area. **Repeat Violation**
36-63-4    Basic - Exhaust/ventilation hood system not designed to prevent grease or condensation from dripping onto food, clean equipment and utensils, and single-service items. Observed condensation and water drip on vent above pastry holding unit, possible cross contamination with pastries when removing from unit.
29-09-4    Basic - Faucet/handle missing at plumbing fixture. Observed missing cold faucet handle at handwashing sink in front area.
36-73-4    Basic - Floor soiled/has accumulation of debris. Observed accumulation of grease and old food debris behind and on the sides of cook line in kitchen. **Repeat Violation**
36-17-5    Basic - Floor tiles missing and/or in disrepair. Observed disrepair cracked tiles around kitchen and food prep areas.
10-02-4    Basic - In-use utensil not stored on a clean portion of food preparation or cooking equipment. Observed tongs placed under panini machine on soiled counter top. Also observed a tong with food contact surface placed on top of books and soiled counter top of pastry holding unit.
22-08-4    Basic - Interior of oven/microwave has accumulation of black substance/grease/food debris. Observed accumulation of grease on the panini machine in front area.
51-13-4    Basic - No Heimlich maneuver/choking sign posted. Provided to operator by email.
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed accumulation of grease on the stove hood filters. **Repeat Violation**
14-33-4    Basic - Reach-in cooler shelves with rust that has pitted the surface. Observed accumulation of rust in shelves of RIC in back area. **Repeat Violation**
21-10-4    Basic - Soiled dry wiping cloth in use. Observed soiled dry wiping cloth under flat top grill in kitchen.
36-02-5    Basic - Unsealed concrete floor in food preparation, food storage, warewashing area or bathroom. Observed unsealed concrete floors in kitchen area.
36-27-5    Basic - Wall soiled with accumulated grease, food debris, and/or dust. Observed soiled walls behind blender and prep table in front area. Also observed soiled with accumulation of grease wall around cookline/stove area.
41-07-4    High Priority - Container of medicine improperly stored. Observed a bottle of prescription tablets stored on a shelf next to food items in the kitchen. Operator removed. **Corrected On-Site**
29-34-4    High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Observed no vacuum breaker on hose bib with hose attached near cook-line.
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Observed soiled with black like substance the interior of the ninja blending machine in the front. **Repeat Violation**
31B-02-4    Intermediate - No paper towels or mechanical hand drying device provided at handwash sink. Observed no paper towels at front counter handwashing sink. Operator was able to provide. **Corrected On-Site**
02C-02-5    Intermediate - Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Observed chicken tamales with no date marking. Per operator made on Friday. **Repeat Violation**
