A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Bowl or other container with no handle used to dispense food. Observed plastic container with no handle stored in sugar and cornmeal storage containers in kitchen. **Warning**
Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Observed opened personal bottle of ginger ale on shelf above pizza make table at front counter. **Warning**
Basic - Lights in food preparation, food storage or warewashing area missing the proper shield, sleeve coatings or covers, above walk in cooler. **Warning**
Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust.
1. Hood filters at cookline in kitchen.
2. Door gaskets at three door reach in cooler opposite cookline in kitchen. **Warning**
High Priority - Assorted Pizza slices, Time/temperature control for safety food identified in the written procedure as a food held using time as a public health control has no time marking. Operator time marked 2:30p-6:30p. **Corrected On-Site** **Warning**
High Priority - Rodent activity present as evidenced by rodent droppings found.
1. Observed 1 dropping on package of pasta in kitchen.
2. Observed 1 rodent droppings on box of single serve containers on storage rack in kitchen.
3. Observed approximately 15 rodent droppings in front of walk in cooler, under storage racks, and prep tables in kitchen. **Warning**
