A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - In-use utensil in non-time/temperature control for safety food not stored with handle above top of food within a closed container. Scoop handle in contact with fried corn kernels
Basic - Time/temperature control for safety food thawed in an improper manner. Observed chicken breast 36F defrosting out at room temperature by prep sink.
High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. 0 Ppm ran three cycles rechecked 0 Ppm operator placed service call. **Warning**
High Priority - Employee cracked raw shell eggs and then handled ready-to-eat food and/or clean equipment or utensils without washing hands. Observed employee cracked raw shell egg change gloves then handled single serve item without washing hands. Explained to operator proper hand washing technique
High Priority - Raw animal food stored over canned/bottled drinks.
Observed in walk-in cooler raw skirt steak stored over plastic bottles of drinking water.
High Priority - Raw animal food stored over or with ready-to-eat food in a freezer - not all products commercially packaged. Observed in low boy freezer raw steak stored over peas and carrots and corn on the cob not all commercially packaged. High Priority - Single-use gloves not changed as needed after changing tasks or when damaged or soiled. Observed employee handling raw sausage then proceeded to handle clean plate without changing gloves. Explained to operator proper hand washing technique

Observed in lower flip top cooler octopus (44-47F - Cold Holding) per operator held out of temperature less than two hours not portion or prepared today.
