Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

14-09-4    Basic - Cutting board has cut marks and is no longer cleanable. Observed 2 grooved cutting boards on top of preparation table in front of stove at kitchen area.
10-07-4    Basic - In-use utensil stored in standing water less than 135 degrees Fahrenheit. Observed clean utensils stored in standing water at 88F inside container on top of preparation table in front of stove at kitchen area.
21-04-4    Basic - In-use wet wiping cloth/towel used under cutting board. Observed on top of preparation table in front of office at front counter. Operator removed wet wiping cloth from under cutting board during inspection. **Corrected On-Site**
22-08-4    Basic - Interior of oven/microwave has accumulation of black substance/grease/food debris. Observed microwave interior soiled on top of preparation table in front of office at front counter. **Repeat Violation**
12B-13-4    Basic - Opened employee beverage container in a cold holding unit with food to be served to customers. Observed employee opened water bottle stored over cheese container at reach in cooler next to office at front counter.

02D-01-5    Basic - Working containers of food removed from original container not identified by common name. Observed salt container not identified on top of preparation table in front of stove at kitchen area. Operator identified during inspection. **Corrected On-Site**
08A-05-6    High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. Observed raw shell eggs stored on top of cut avocado inside reach in cooler at front counter next to office. Employee removed raw shell eggs and stored in another cold holding unit. **Corrected On-Site**
03B-01-6    High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed Ham croquettes (117F - Hot Holding); Beef empanada (120F - Hot Holding) inside hot holding unit at front counter. As per operator for less than 2 hours. Operator removed to reheat unit in the fryer at the time of inspection. **Corrective Action Taken**
29-34-4    High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Observed on hose bibb next to mop sink at kitchen area.
31A-11-4    Intermediate - Handwash sink used for purposes other than handwashing. Observed plastic container stored inside hand wash sink at front counter in front of office. Operator removed container during inspection. **Corrected On-Site**
03F-10-5    Intermediate - No written procedures available for use of time as a public health control to hold time/temperature control for safety food. Provided form to operator during inspection. Operator filled out time/temperature control form during inspection. **Corrected On-Site**
16-08-4    Intermediate - Sink compartments of three-compartment sink too small to accommodate utensils or equipment. Observed at kitchen area.
