Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

16-55-4    Basic - Dishmachine not washing/rinsing properly. Must wash, rinse and sanitize all dishware, equipment and utensils in three-compartment sink until dishmachine is functioning properly. Observed 1st Test Dishwasher (chlorine 0ppm/quat); 2nd test Dishwasher (chlorine/Quaternary 0ppm); 3rd test Dishwasher Quaternary/Chlorine 0ppm). Operator is unaware of type of sanitizer, tested for both. Explained to operator to not use dishwashing machine wash and sanitize in three compartment sink. **Warning**
35B-02-4    Basic - Insect control device installed over food preparation area. Observed bug zapped in use above auto shams where chips are stored. **Warning**
38-01-4    Basic - Light shield damaged/in disrepair. Observed missing all light shields at cook-line and warewashing area. **Warning**
05-09-4    Basic - No conspicuously located ambient air temperature thermometer in holding unit. Observed no a,being thermometer inside reach in cooler across cook-line. **Warning**
03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed raw shrimp (50F - Cold Holding); raw fish (53F - Cold Holding). Per operator it was placed in cooler 30 min.s ago. Operator placed in walk in cooler to cool down. **Corrective Action Taken** **Warning**
16-37-1    Intermediate - No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. No quaternary test strips for sanitizing bucket using quaternary pills available. **Warning**
