A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Equipment in poor repair. Observed reach in cooler at the front counter is not working properly. All foods were out of temperature. **Warning**
Basic - Time/temperature control for safety food thawed in an improper manner. Observed frozen chicken stored next to the 3 compartment sink. As per manager, se left the chicken outside since 8:30 AM this morning. Manager was coached how to thaw food properly. **Warning**
High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed tuna (47 F - Cold Holding); beef (47 F - Cold Holding); chicken (46 F - Cold Holding); grilled chicken (49 F - Cold Holding); fried eggs (58 F - Cold Holding); roast beef (52 F - Cold Holding); ham (46 F - Cold Holding); turkey (46 F - Cold Holding); cheese (51 F - Cold Holding) inside the reach in cooler at the front counter. As per manager foods were placed around 8:30 AM. **Warning**
Intermediate - No paper towels or mechanical hand drying device provided at handwash sink. Observed at the hand wash sink at the dry storage. **Warning**
Intermediate - No proof of required state approved employee training provided for any employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Observed Mirainys C, Jennifer, Alexander. More than 2 months. **Warning**
