Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

14-45-4    Basic - Cardboard used to line nonfood-contact shelves. Observed cardboard box lining shelves under microwave.
36-37-5    Basic - Ceiling not smooth, nonabsorbent and easily cleanable in food preparation, food storage, or warewashing areas. Observe ceiling tiles not smooth in kitchen and front area.
24-08-4    Basic - Equipment and utensils not properly air-dried - wet nesting. Observed plastic food containers wet nesting on shelves at 3CS area.
14-11-5    Basic - Equipment in poor repair. Observed broken door handle for RIC next to microwave and missing door handle for RIC near stove. Observed no drain plugs for 3CS, unable to clean and sanitize food equipment properly.
36-73-4    Basic - Floor soiled/has accumulation of debris. Observed soiled floors under shelves of dry storage items in hallway.
36-17-5    Basic - Floor tiles missing and/or in disrepair. Observed broken floor tiles through kitchen area. **Corrected On-Site**
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed soiled door gaskets of reach on coolers. Observed accumulation of grease on hood filters of stove. Observed accumulation of soil for shelves of dry storage items in hallway and shelves at 3 CS housing clean food pans. **Repeat Violation**
21-09-4    Basic - Wet wiping cloths used for occasional spills on equipment food- and nonfood-contact surfaces not clean. Observed on top of bucket water bucket near stove.
22-12-5    High Priority - Metal stem-type thermometer soiled. Observed three soiled thermometers.
41-27-4    High Priority - Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Observed Sanitizer Bucket (Chlorine 400+ppm); Operator diluted, 2nd test Sanitizer Bucket (Chlorine 200ppm); **Corrected On-Site**
05-07-4    Intermediate - Food thermometer(s) not calibrated according to manufacturer's specifications. Observed electronic probe thermometer reading at 40°F in 32°F ice water.
31A-11-4    Intermediate - Handwash sink used for purposes other than handwashing. Observed good particles inside handwashing sink near 3CS.
22-31-4    Intermediate - Non-pitting surface rust on food-contact equipment. Observed accumulation of rust for shelves of dry storage items in hallway and shelves at 3 CS housing clean food pans.
41-17-4    Intermediate - Spray bottle containing toxic substance not labeled. Observed no label on chemical spray bottle on top of 3CS. Per operator, it is degreaser.
