Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-34-5    Basic - Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance. Observed all throughout kitchen prep/ ware washing area.
14-09-4    Basic - Cutting board has cut marks and is no longer cleanable. Observed several auxiliary cutting boards with marks not longer clean.
36-12-4    Basic - Floors not constructed to be easily cleanable. Observed deep grouts at some kitchen floor parts
08B-38-4    Basic - Food stored on floor. Observed sauce plastic buckets stored on the kitchen floor.
31B-04-4    Basic - No handwashing sign provided at a hand sink used by food employees. Observed at unit by soda rack station.
23-03-4    Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed soiled gasket at all cooling units in the establishment.
36-27-5    Basic - Wall soiled with accumulated grease, food debris, and/or dust. Observed soiled gasket by soda rack area.
21-07-4    Basic - Wiping cloth chlorine sanitizing solution not at proper minimum strength. Observed chlorine sanitizer bucket at 0 ppm front counter, staff prepared new solution retested at 100 ppm. **Corrected On-Site**
12A-07-5    High Priority - Employee failed to wash hands before putting on gloves to initiate a task working with food. Observed employees changing gloves not washing hands hands before, coached staff on proper handwashing techniques. **Corrective Action Taken**
08B-56-4    High Priority - Food stored in ice used for drinks. See stop sale. Observed package of personal food stored in one of the ice machines bin.
01B-03-5    High Priority - Stop Sale issued due to adulteration of food product. Observed package of personal food stored in one of the ice machines bin.
03A-02-5    High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed raw chicken thighs (61/67/62F - Cold Holding) on a tray at cook line, as per staff for less than an hour, staff proceeded to place chicken in the over to cook to 165° and above. **Corrective Action Taken**
09-17-4    Intermediate - Employee using bare hand contact with nonready-to-eat food (such as raw animal food or flour) unnecessarily without the use of gloves, deli paper, scoops, tongs or other utensils. Observed employee filling up flip top cooler with not ready to eat food with bare hands, employee was instructed to wash hands and place gloves to work with food. **Corrective Action Taken**
22-02-4    Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime. Observed can opener blade blade heavily soiled.
31B-05-4    Intermediate - Paper towel dispenser at handwash sink not working/unable to dispense paper towels. Observed at unit by front counter door pass.
