A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance. On and around the vent over the prep table. **Warning**
Basic - In-use utensil in non-time/temperature control for safety food not stored with handle above top of food within a closed container. In the bin of granola, the handle was buried. The scoop was corrected **Corrected On-Site** **Warning**
High Priority - Live, small flying insects found.
Approximately 25 live small flying insects landing on the wall and TVs above the front serving line and expo station.
2 live small flying insects landing on aluminum to go containers on the top shelf of the cook line window.
Approximately 5 live small flying insects landing on the walls of the mop sink
Approximately 20 small flying insects landing on the single service item boxes in the corner by the dish area and dry storage room. **Warning**
Intermediate - Ambient air thermometer in holding unit not accurate within plus or minus 3 degrees Fahrenheit. In the double door reach in cooler, the ambient temperature thermometer reads -15F. The food temperatures are 36F. The thermometer was replaced **Corrected On-Site** **Warning**
Intermediate - Handwash sink removed from food preparation/dishwashing area. Must be reinstalled in the same location where removed. At the front counter. **Warning**
