Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance.
Observed; dust build up around vent in kitchen.
Dust build up around vents in dining room.

Basic - Cutting board has cut marks and is no longer cleanable.
Observed cutting board with grooves and no longer smooth and easily cleanable by three compartment sink. **Repeat Violation**
Basic - Equipment and utensils not properly air-dried - wet nesting.
Observed blue plastic cups stacked on top of each other with visible signs of moisture and unable to air dry stored in server station.
Basic - In-use tongs stored on equipment door handle between uses.
Observed 2 sets of tongs hanging on metal bar under cook line in potential path of employees walking by.
Basic - Old labels stuck to food containers after cleaning.
Observed old labels and tape on bus tubs used for food storage stored above three compartment sink.
High Priority - Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature.
Observed raw chicken stored over raw oysters in reach in cooler on cook line. Person in charge rearranged food items to proper storage levels. **Corrected On-Site**
Intermediate - Food-contact surface soiled with food debris, mold-like substance or slime.
Observed soda guns and holsters with mold like substance build up. Person in charge cleaned all areas. **Corrected On-Site** **Repeat Violation** **Warning**
Intermediate - No paper towels or mechanical hand drying device provided at handwash sink.
Observed no paper towels at hand wash sink near rice hot holding unit. Person in charge provided paper towels.
