Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. In general, critical violations are those that, if not corrected, are more likely to contribute directly to food contamination, illness or environmental damage. Although we use the industry-standard term "critical", varying degrees of severity and potential risk to the public require inspectors to assess each situation in determining the appropriate action. In addition, while an establishment may have multiple violations, the inspectors' training and judgment formulate the overall result of the inspection to ensure the public health and safety. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

10-06-1    In-use utensil not stored with handle above the top of potentially hazardous food and the container. Ice cream scoop handle touching product.

23-06-1    Observed build-up of food debris, dust or dirt on nonfood-contact surface. Exterior surface of containers holding soy sauce, MSG, flour, etc.

03A-07-1    Critical - Observed potentially hazardous food cold held at greater than 41 degrees Fahrenheit. Cut melons at buffet line at 52 F.
35A-05-1    Critical - Observed roach activity as evidenced by live roaches found in the kitchen. Observed 16 live roaches on stack of white bucket on kitchen floor, observed 2 live roaches behind ice maker, observed 4 live roaches on the floor under prep table, observed 3 live roaches on the walk by dishmachine, one live roach on rice container, 3 live roaches on ceiling above coca-cola cooler, 3 live roaches by electrical panel and observed 16 dead roaches throughout kitchen.

08A-29-1    Critical - Observed uncovered food in holding unit/dry storage area - open bag of rice flour not stored in covered container.
37-07-1    Observed wall soiled with accumulated dust and cob webs - back storage area, and above back door.
29-03-1    Observed water draining onto floor surface. Observed water pooling on the floor next to 3-compartment sink / dishmachine.
03B-03-1    Critical - Potentially hazardous food not held at 135 degrees Fahrenheit or above. Chicken (122F), beef (102F), and baked chicken (118F) at buffet.
02-22-1    Critical - Ready-to-eat, potentially hazardous food prepared on site and held more than 24 hours with not properly date marked - cooked chicken, eggrolls, shrimp, etc. in the reach-in-cooler and walk-in-cooler.
08A-21-1    Critical - Self-service salad bar/buffet lacking adequate sneezeguards or other proper protection from contamination. Cookies at buffet line not protected.
30-02-1    Critical - Vacuum breaker mising at hose bibb - three compartment sink.
27-17-1    Critical - Water pressure lacking at fixtures that require the use of water - cold water at 3-compartment sink.
21-12-1    Wet wiping cloth not stored in sanitizing solution between uses.
