A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
In general, critical violations are those that, if not corrected, are more likely
to contribute directly to food contamination, illness or environmental damage.
Although we use the industry-standard term "critical", varying degrees of severity
and potential risk to the public require inspectors to assess each situation in
determining the appropriate action. In addition, while an establishment may have
multiple violations, the inspectors' training and judgment formulate the overall
result of the inspection to ensure the public health and safety. While most
establishments correct all violations in a timely manner (often during the inspection),
the division's procedures are designed to compel compliance with all violations through
follow-up visits, administration action or closure when necessary.
Critical - Hand wash sink (handsink at front kitchen wait station, handsink at dishwash area and bar handsink ) lacking proper hand drying provisions Corrected On Site.
Critical - Observed dead roaches on premises. Observed approximately 20 dead roaches inside non working reach in cooler located across from walk in cooler. Observed three dead roaches on shelf holding chemicals in dishwash area.
Critical - Observed expired safestaff employee trainung certificates. According to certificates, employees were trained in 2005 and 2006. Operator has new employee training books.
Critical - Observed roach activity as evidenced by live roaches found. Observed 12 live roaches on shelf holding chemicals in dishwash area. Observed 4 live roaches on shelf,next to back door, at dishwash area. Observed one live roach crawl across counter behind cookline. Observed one live roach crawl across floor at cookline. Observed one live roach crawl on floor at dishwash area.Observed pest control receipt from Orkin dated 2-25-12. Operator contacted Orkin for pest control treatment for today.
Critical - Observed rodent activity as evidenced by rodent droppings found. Observed ten dry rodent droppings located inside non working reach in cooler located across from walk in cooler
