Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. In general, critical violations are those that, if not corrected, are more likely to contribute directly to food contamination, illness or environmental damage. Although we use the industry-standard term "critical", varying degrees of severity and potential risk to the public require inspectors to assess each situation in determining the appropriate action. In addition, while an establishment may have multiple violations, the inspectors' training and judgment formulate the overall result of the inspection to ensure the public health and safety. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

32-17-1    Critical - Handwashing cleanser lacking at handwashing lavatory. Server area by steam table. Repeat Violation.
10-04-1    In-use utensil for nonpotentially hazardous food not stored in a clean, protected location. Tongs on oven handles. Repeat Violation.
53A-01-2    Critical - Manager lacking proof of Food Manager Certification. Card/certificate in other purse per manager.
53A-09-1    Critical - No currently certified food service manager on duty with four or more employees engaged in food preparation.
32-15-1    Critical - No handwashing sign provided at a handsink used by food employees. Dish washing area. Repeat Violation.
53B-08-1    Critical - No proof of required employee training provided. All public food service establishments must provide the division with proof of employee training upon request, including, but not limited to, at the time of any division inspection of the establishment. Unable to find books/certificates. Repeat Violation.
12B-07-1    Critical - Observed an open beverage container on a food preparation table or over/next to clean equipment/utensils. On prep table next to steam table, across from cookline. Repeat Violation.
23-03-1    Observed build-up of grease on nonfood-contact surface. Inside fryers, behind doors. Repeat Violation.
22-24-1    Critical - Observed buildup of old syrup around soda dispensing nozzles. Fountain in server area, guns behind bar.
14-37-1    Observed cutting board grooved/pitted and no longer cleanable. Multiple.
22-22-1    Critical - Observed encrusted material on can opener.
37-13-1    Observed hole in ceiling. Over/near dish machine, slight water leak.
22-28-1    Critical - Observed interior of reach-in cooler soiled with accumulation of food residue. At end of bar, debris/rust buidup.
18-04-1    Observed old labels stuck to food containers after cleaning. On storage racks near dish washing room.
06-05-1    Critical - Observed potentially hazardous food thawed in standing water. Pre-cooked spinach, 2-well prep sink, end of cookline. Corrected On Site. Started cooking for prep.
02-07-1    Critical - Observed processed ready-to-eat, potentially hazardous food held more than 24 hours not properly date marked after opening. Heavy cream and milk in reach in cooler at cookline.
08A-26-1    Critical - Observed raw animal food stored over ready-to-eat food. Raw beef over sliced vegetables in tall reach in cooler near 10 burner stove.
08A-24-1    Critical - Observed raw animal foods not properly separated from each other in holding unit/during preparation. Raw chicken and beef over raw shrimp in reach in cooler across from 10 burner stove.
23-08-1    Observed soda gun holster with accumulated slime/debris. Multiple.
22-21-1    Critical - Observed soil buildup inside ice bin. Upper rear of bin at fountain in server area.
30-02-1    Critical - Vacuum breaker mising at hose bibb. Spigots at outside, curbed mop sink.
29-17-1    Waste line missing at soda gun holster. Entrance to bar. Repeat Violation.
02-26-1    Critical - Working containers of food removed from original container not identified by common name. Bulk containers of seasonings/spices at cookline under prep table near office. Repeat Violation.
