Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. In general, critical violations are those that, if not corrected, are more likely to contribute directly to food contamination, illness or environmental damage. Although we use the industry-standard term "critical", varying degrees of severity and potential risk to the public require inspectors to assess each situation in determining the appropriate action. In addition, while an establishment may have multiple violations, the inspectors' training and judgment formulate the overall result of the inspection to ensure the public health and safety. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

02-26-1    Critical - Violation: 02-26-1 Working containers of food removed from original container not identified by common name. Multiple in walk in cooler.
06-04-1    Critical - Violation: 06-04-1 Observed potentially hazardous food thawed at room temperature. Raw chicken in container in dish washing area. Corrected On Site. Put in walk in cooler.
08A-24-1    Critical - Violation: 08A-24-1 Observed raw animal foods not properly separated from each other in holding unit/during preparation. Rewrapped raw shrimp on rewrapped raw beef in reach in freezer at entrance to kitchen.
08A-28-1    Critical - Violation: 08A-28-1 Observed food stored on floor. Containers of raw chicken and cut lettuce in dish washing area. Corrected On Site.
08A-29-1    Critical - Violation: 08A-29-1 Observed uncovered food in holding unit/dry storage area. Open bag of rice on dry storage shelf.
08B-09-1    Critical - Violation: 08B-09-1 Single-use gloves not changed as needed after changing tasks or when damaged or soiled. Cook talking on cell phone with gloves on, then handling salsa.
09-04-1    Critical - Violation: 09-04-1 Observed bare hand contact of ready-to-eat food by employees and establishment has no approved Alternative Operating Procedure in effect. Cook chopping parsley. Corrected On Site. Discussed proper procedure with cook and manager. Repeat Violation.
10-08-1    Violation: 10-08-1 Observed ice scoop with handle in contact with ice. In ice machine.
12A-16-1    Critical - Violation: 12A-16-1 Observed employee engage in food preparation, handle clean equipment or utensils, or touch unwrapped single-service items, without washing hands. Between changing gloves before touching ready to eat food. Multiple cooks, multiple occurences. Corrected On Site. Discussed proper procedure with manager.
14-31-1    Violation: 14-31-1 Equipment or utensils not designed or constructed in a manner consistent with the food code. Scoop without handle in sugar at prep area next to ice machine.
14-33-1    Violation: 14-33-1 Observed equipment in poor repair. Cutting board over triple sink broken in half.
22-20-1    Critical - Violation: 22-20-1 Observed buildup of slime in the interior of ice machine.
22-24-1    Critical - Violation: 22-24-1 Observed buildup of slime around soda dispensing nozzles. Fountain at server area, buildup in tea urn nozzles as well.
23-08-1    Violation: 23-08-1 Observed soda gun holster with accumulated slime/debris. Server area.
24-08-1    Violation: 24-08-1 Equipment and utensils not properly air-dried. Multiple containers wet nesting on storage shelf over triple sink.
27-16-1    Critical - Violation: 27-16-1 Hot water not provided/shut off at employee hand wash sink. Throughout establishment. Water heater broken.
31-12-1    Critical - Violation: 31-12-1 Observed handwash sink used for purposes other than handwashing. Storing spoon. Server area.
32-15-1    Critical - Violation: 32-15-1 No handwashing sign provided at a handsink used by food employees. Multiple.
35A-08-1    Critical - Violation: 35A-08-1 Observed live flies in kitchen. Repeat Violation.
36-11-1    Violation: 36-11-1 Floors not maintained smooth and durable. Multiple missing, cracked tiles throughout kitchen.
37-02-1    Violation: 37-02-1 Observed hole in wall. Large hole next to oven at cookline.
41B-01-1    Critical - Violation: 41B-01-1 Observed sanitizing solution exceeding the maximum concentration allowed. Chlorine 450+ ppm, bucket.
53A-01-2    Critical - Violation: 53A-01-2 Manager lacking proof of Food Manager Certification. Alfredo Escamilla.
53A-09-1    Critical - Violation: 53A-09-1 No currently certified food service manager on duty with four or more employees engaged in food preparation.
53B-08-1    Critical - Violation: 53B-08-1 No complete proof of required employee training provided. All public food service establishments must provide the division with proof of employee training upon request, including, but not limited to, at the time of any division inspection of the establishment. No cards/certificates have been filled out. Repeat Violation.
