Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. In general, critical violations are those that, if not corrected, are more likely to contribute directly to food contamination, illness or environmental damage. Although we use the industry-standard term "critical", varying degrees of severity and potential risk to the public require inspectors to assess each situation in determining the appropriate action. In addition, while an establishment may have multiple violations, the inspectors' training and judgment formulate the overall result of the inspection to ensure the public health and safety. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

04-01-1    Critical - Cold holding equipment incapable of maintaining potentially hazardous food at proper temperatures. Reach in cooler at cookline with potentially hazardous food temperatures of 55-60?f. Started discarding products.
20A-10-1    Critical - Dishmachine chlorine sanitizer not at proper minimum strength. 0 ppm. Do not use dish machine to sanitize until unit is repaired and can sanitize at proper level. **Admin Complaint** **Repeat Violation**
10-04-1    In-use utensil for nonpotentially hazardous food not stored in a clean, protected location. Tongs on oven handle. **Corrected On-Site**
17-07-1    Critical - No chemical test kit provided when using chemical sanitizer at three-compartment sink/warewashing machine. Has quat strips, need chlorine, on order.
32-15-1    Critical - No handwashing sign provided at a handsink used by food employees. Women's and men's restrooms.
12B-07-1    Critical - Observed an open beverage container on a food preparation table or over/next to clean equipment/utensils. Coffee next to cutting board, prepping shrimp. Corrected on site - put on lid.
37-11-1    Observed attached equipment soiled with accumulated dust. Walk in cooler AC unit fan cover in walk in cooler.
23-03-1    Observed build-up of grease on nonfood-contact surface. Inside fryers behind doors.
01B-14-1    Critical - Observed dented/rusted cans. 2 bulk cans of tomatoes. Corrected on site - discarded.
22-22-1    Critical - Observed encrusted material on can opener. Residue and metal shaving buildup. **Repeat Violation**
03A-07-1    Critical - Observed potentially hazardous food cold held at greater than 41 degrees Fahrenheit. Chicken, fish, spinach dip, shrimp, sour cream all at 55-60?f in refrigerator style reach in cooler next to fryers, all have been in unit since yesterday, uncertain when unit stopped working.
02-07-1    Critical - Observed processed ready-to-eat, potentially hazardous food held more than 24 hours not properly date marked after opening. Milk in reach in cooler. **Repeat Violation**
08A-27-1    Critical - Observed raw animal food stored over cooked food. Raw shrimp stored over soup in walk in cooler. Corrected on site - moved.
08A-24-1    Critical - Observed raw animal foods not properly separated from each other in holding unit/during preparation. Raw comminuted meat over raw mahi mahi in walk in freezer.
25-01-1    Observed single-service articles handled, displayed, or dispensed in a manner that allows for contamination. Straws on bar front, possibility for coughing sneezing, touching multiple straws. Corrected on site - moved behind bar.
23-08-1    Observed soda gun holster with accumulated slime/debris. Multiple behind bar.
41B-03-1    Critical - Observed unlabeled spray bottle. Clear liquid sanitizer, under triple sink behind bar.
02-22-1    Critical - Ready-to-eat, potentially hazardous food prepared on site and held more than 24 hours with not properly date marked. Soup in walk in cooler made yesterday.
01B-16-1    Critical - Stop Sale issued on potentially hazardous food due to temperature abuse (see Stop Sale Notice). **Repeat Violation**
30-02-1    Critical - Vacuum breaker missing at hose bibb. Behind bar.
