A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
In general, critical violations are those that, if not corrected, are more likely
to contribute directly to food contamination, illness or environmental damage.
Although we use the industry-standard term "critical", varying degrees of severity
and potential risk to the public require inspectors to assess each situation in
determining the appropriate action. In addition, while an establishment may have
multiple violations, the inspectors' training and judgment formulate the overall
result of the inspection to ensure the public health and safety. While most
establishments correct all violations in a timely manner (often during the inspection),
the division's procedures are designed to compel compliance with all violations through
follow-up visits, administration action or closure when necessary.
Critical - Employees have not received training related to their assigned duties. Employee cooking hamburgers did not know proper temperature that burgers should be cooked, corrective action discussed proper temperature with employee.
Critical - No currently certified food service manager on duty with four or more employees engaged in food preparation. Manager stated he has a card but not on site at time of inspection.
Critical - Observed a beverage container on a food preparation table or over/next to clean equipment/utensils. On preep table next to microwave in kitchen, corrective action removed drink.
Critical - Observed employee improperly washing hands. Less than 20 seconds (approximately 3-5 seconds counted) after handling raw burgers then going back to grill to finish cooking burgers.
Critical - Observed handwash sink used for purposes other than handwashing. Handwash sink near upright freezer in walk in ares with fod tray stored on it, corrective action removed tray.
Critical - Observed raw animal food stored over ready-to-eat food. Raw bacon over cooked mushrooms, cheese sauce on speed rack in walk in cooler, corrective action reversed storage.
Critical - Observed toxic item stored by food. Spray bottle with purple solution in it stored on prep table in kitchen, corrective action removed bottle.
Critical - Potentially hazardous food held under time as a public health control without time marking indicating 4-hour limit. Chicken nuggets held on time control under heat lamp next to fryers, corrective action time recorded less than 4 hours ago.
Critical - Quaternary ammonium sanitizer not at proper minimum strength for manual warewashing. Bucket next to handwash sink at front counter at 0ppm, corrective action made new sanitizer solution.
