Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. In general, critical violations are those that, if not corrected, are more likely to contribute directly to food contamination, illness or environmental damage. Although we use the industry-standard term "critical", varying degrees of severity and potential risk to the public require inspectors to assess each situation in determining the appropriate action. In addition, while an establishment may have multiple violations, the inspectors' training and judgment formulate the overall result of the inspection to ensure the public health and safety. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

32-16-1    Critical - Hand wash sink lacking proper hand drying provisions. Sinks at both bars.
31-09-1    Critical - Handwash sink not accessible for employee use at all times. Dish area, server area, corrective action moved items away ffom sink.
32-17-1    Critical - Handwashing cleanser lacking at handwashing lavatory. Sinks at both bars.
27-16-1    Critical - Hot water not provided/shut off at employee 3 compartment sink. Upstairs bar, corrective action hot water turned on at valve.
05-09-1    Critical - No conspicuously located thermometer in holding unit. Various reach in coolers throughout.
32-15-1    Critical - No handwashing sign provided at a handsink used by food employees. Sinks at downstairs bar.
12B-07-1    Critical - Observed an open beverage container on a food preparation table or over/next to clean equipment/utensils. Various tables throughout, corrective action removed drinks.
12A-16-1    Critical - Observed employee engage in food preparation, handle clean equipment or utensils, or touch unwrapped single-service items, without washing hands. Before gloves when prepping food.
31-12-1    Critical - Observed handwash sink used for purposes other than handwashing. Strainer for dumping in upstairs bar handwash sink.
10-08-1    Observed ice scoop with handle in contact with ice. Upstairs server station.
08A-22-1    Critical - Observed improper horizontal separation of raw animal foods and ready-to-eat foods. Lemons and pepperss next to raw pork in walk in cooler, corrective action moved ready to eat food away from raw food.
29-11-1    Observed leaking pipe at plumbing fixture. Handwash sink near entrance to bar.
06-04-1    Critical - Observed potentially hazardous food thawed at room temperature. Beef at 71F, corrective action began prepping.
08A-24-1    Critical - Observed raw animal foods not properly separated from each other in holding unit/during preparation. Raw chicken over raw pork in walk in cooler, corrective action reversed.
35A-07-1    Critical - Observed small flying insects in bar area. Upstairs bar.
41B-03-1    Critical - Observed unlabeled spray bottle. At both bars.
03C-09-1    Critical - Reheated food for hot holding not reaching 165 degrees Fahrenheit within 2 hours. Refried beans at 11F in 1 1/2 hours, corrective action reheated to 165F.
