Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Lights in food preparation, food storage or warewashing area missing the proper shield, sleeve coatings or covers. Walk in cooler and walk in freezer. **Repeat Violation** **Warning**
Basic - Nonfood-grade plastic to-go/thank you bags used in direct contact to store food. Used in walk in freezer to hold raw meats directly **Warning**
Basic - Raw animal food not properly separated from unwashed produce. Raw chicken bins were dripping down onto a bag of raw whole onions. SEE STOP SALE. CORRECTIVE ACTION TAKEN: chicken was removed and onions were placed under prep table on shelf **Warning**
High Priority - Butter/butter blend/clarified butter/whipped butter hot held at less than 135 degrees Fahrenheit. Melted butter in pan on prep table 76° less Han 4 hours. CORRECTIVE ACTION TAKEN: butter was transferred to a metal pan and placed on stove top to heat up **Warning**
High Priority - Single-use gloves not changed as needed after changing tasks or when damaged or soiled. Employee did not change gloves after taking out garbage then engaged in food prep. CORRECTIVE ACTION TAKEN: I notified the employee of proper glove changing especially after taking out garbage **Warning**
