Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Employee personal items stored with or above food, clean equipment and utensils, or single-service items. (Shoes on bottom rack by paper towel stock for restrooms. Coat on dry storage food rack.) **Repeat Violation**
Basic - Single-service articles not stored inverted or protected from contamination. (Observed open box of sanitary gloves below soap dispenser at handsink in sandwich prep station. Wet hands and dripping soap can potentially soil gloves before use.). Glove box relocated. **Corrected On-Site**
High Priority - Dishmachine not sanitizing properly. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Heat strip did not turn black. Two cycles attempted during many cycles of dishes run during inspection. **Admin Complaint** **Repeat Violation**
High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. (Carton of liquid eggs on prep table shelf. Employee states it has been out about an hour. Carton returned to walk in cooler at 1pm.) 74°F at first check
High Priority - Potentially hazardous (time/temperature control for safety) hot held at less than 135 degrees Fahrenheit or above. ( 63°F soffritto; cooked vegetables). Corrective action relocated to cooling unit.
High Priority - Server handled soiled dishes or utensils and then picked up plated food, served food, or prepared a beverage without washing hands. **Corrected On-Site**
Intermediate - Hot water supply not maintained during peak periods. Hot water is not sufficient at dish machine. Hand sinks take several minutes to reach 100°F at every use. Water fluctuates between 70°F and 104°F once temperature is reached.
Intermediate - Required employee training provided by a third-party employee training program and operator unable to provide original certificate for employees trained. (Some proof are copies of certificates.)
