A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Build-up of mold-like substance on nonfood-contact surface. On cabinet next to ice cream chest at front counter. On ice bin under soda machine at front counter.
Basic - Dead roaches on premises. Two dead roaches on shelf next to ice cream chest freezer at front counter area. Two dead roaches in mobile cabinet near soda machine.
Three dead roaches in door jam to restroom door. One dead roach in upright reach in cooler in back kitchen. **Repeat Violation**
Basic - Plumbing system in disrepair. Operator has three compartment sink water valves shut off. Operator states that he does not use the three compartment sink. Faucet for three compartment sink is stuck in one position and cannot move. It is stuck on the sanitizing bay and cannot move from this position.
High Priority - Food-contact surfaces not sanitized after cleaning, before use. Do not use equipment/utensils not properly sanitized. Operator states he washes, rinses utensils in the prep sink at the front counter area. Operator states he does use the three compartment sink.
High Priority - Roach activity present as evidenced by live roaches found. Four live roaches found under soda machine cabinet area. One live roach found in mobile cabinet next to ice cream freezer at front counter area. One live roach in wheel to cabinet near ice shaver machine at front counter area. Five live roaches in a box in the restroom of of the kitchen. One live roach in paper towels in employee restroom. Two live roaches found in gasket to reach in cooler next to ice machine in back kitchen. **Repeat Violation**
Intermediate - Handwash sink not accessible for employee use due to items stored in the sink. Dish ware stored in hand wash sink near three compartment sink. **Corrected On-Site** **Repeat Violation**
Intermediate - Hot water not provided/shut off at employee handwash sink. At all faucets no hot water in whole establishment. Prep sink at front counter 80°F max, hand wash sink in kitchen 75°F max. Employee restroom hot water max 79°F.
