A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Floor soiled/has accumulation of debris. Behind cook line equipment pieces of foam. The operator states that when the a/c is turned on that the foam blows from the vents. The operator stated he does not turn the a/c unit on. **Warning**
Basic - Standing water or very slow draining water in handwash sink, three-compartment sink, or mop sink. Hand wash sink draining slowly near stove. **Warning**
Basic - Storage of tools on shelf above or with clean equipment and utensils, single service items, and/or clean linens. Weed eater stored above three compartment sink. **Warning**
High Priority - Rodent activity present as evidenced by rodent droppings found. 10 dry hard rodent droppings found behind three door non functioning cooler used for storage on cook line. 10 dry hard droppings found under the non functioning three door reach in cooler on cook line. Approximately 20 droppings found along walks near cash register area. One dry hard dropping found in bag of coffee under register area. One dry hard dropping found on shelf with radio next to three compartment sink. 10 dry hard droppings found in lid to container in dry rack across from three compartment sink. Approximately 10 dry rodent droppings found on floor in room to three compartment sink. Approximately 10 dry hard droppings found next to refrigerator in area with smoker cooker. **Warning**
High Priority - Rodent rub marks present along walls/ceilings. Rub mark present on lower wall behind non functioning three door reach in cooler used for storage. Exterior of building west side above the a/c unit are rub marks along a pipe. **Warning**
Intermediate - Certified Food Manager or person in charge lacks knowledge of employee health policy and health requirements. Distributed handout to operator and reviewed big five food borne illnesses. **Corrective Action Taken** **Warning**
Intermediate - Food manager certification expired. A list of accredited food manager certification examination providers can be found at http://www.myfloridalicense.com/dbpr/hr/food-lodging/managercertification.html. **Warning**
Intermediate - Handwash sink not accessible for employee use due to items stored in the sink. Knife stored in hand wash sink near rear exit door. **Warning**
Intermediate - Ready-to-eat, potentially hazardous (time/temperature control for safety) food prepared onsite and held more than 24 hours not properly date marked. Cooked chicken and vegetables in double door reach in cooler. **Repeat Violation** **Warning**
