Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

14-40-4    Basic - Nonfood-contact equipment in poor repair. Lid to prep cooler at cook line does not open/ close properly . **Warning**

02D-01-5    Basic - Working containers of food removed from original container not identified by common name. Observed containers of such items as potato salad, chicken, deli meats , prepared onsite , not labeled **Warning**

08A-09-4    High Priority - Raw animal food stored over ready-to-eat food in walk-in cooler. Observed raw shell eggs stored in open crate above containers of other items in walk in cooler **Warning**
35A-04-4    High Priority - Rodent activity present as evidenced by rodent droppings found. Observed dry and some wet rodent droppings, too numerous to count (75+)in back (non food) storage area (behind walk in freezer) , on ladder, shelving, unused equipment. Also found rodent dropping, too numerous to count under furnace/ air conditioning unit. (30+) Also found dry droppings on shelving unit in prep area . (Too numerous to count) (25+) And under area where cases of bag-in-box soda stored. Sticky traps in use to try to rectify problem (25+) **Admin Complaint**
01B-14-4    High Priority - Shell eggs in use or stored with cracks or broken shells. See stop sale. Observed cracked shell eggs at cook line stored in container with whole shell eggs. Cracked eggs discarded by management **Warning**
16-33-4    Intermediate - Chemical test kit not used to ensure proper sanitization of equipment and utensils when using a chemical sanitizer. **Warning**
22-05-4    Intermediate - Cutting board(s) stained/soiled. In kitchen at prep tables **Warning**
16-35-4    Intermediate - No chlorine chemical test kit provided when using chlorine sanitizer at three-compartment sink/warewashing machine. **Warning**
53A-05-5    Intermediate - No currently certified food service manager on duty with four or more employees engaged in food preparation/handling.
