Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

24-07-4    Basic - Cleaned and sanitized equipment or utensils not properly stored. Observed chill stick stored stored on soiled wooden rack on walk in freezer floor. Advised to keep chill stick on a clean surface in between uses. **Warning**
35A-03-4    Basic - Dead roaches on premises. Observed: one dead roach in glue trap in wait station cabinet, two dead roaches beneath rear prep table. **Warning**
25-05-4    Basic - Single-service articles stored on floor of storage shed. **Warning**
08A-05-4    High Priority - Raw animal food stored over ready-to-eat food. Observed raw beef stored above ready to eat cut leafy greens in the Walk In Cooler. **Warning**
35A-05-4    High Priority - Roach activity present as evidenced by live roaches found. Observed approximately: 1 live roach on wall above mop sink, 15 live roaches between wall and shelf above rear Hand Wash Sink near spice containers. Roaches killed and disposed of by Manager. **Corrected On-Site** **Warning**
