Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-34-5    Basic - Ceiling/ceiling tiles/vents soiled with accumulated food debris, grease, dust, or mold-like substance. Pot washing room ceiling tiles and vents has mold like build up. **Repeat Violation**
24-08-4    Basic - Equipment and utensils not properly air-dried - wet nesting. Observed pans stacked wet on storage shelves in the pot wash room.
36-14-4    Basic - Grease accumulated on kitchen floor and/or under cooking equipment Observed the floor near oven and fryers
36-62-4    Basic - Light not functioning. Observed light out inside walk in cooler used for beverages.
16-46-4    Basic - Old labels stuck to food containers after cleaning. Observed plastic containers stacked in the hallway.
21-38-4    Basic - Wiping cloth sanitizing solution stored on the floor. Observed sanitize bucket stored near sauté area. **Corrected On-Site**
03B-02-4    High Priority - Cooked meats or poultry hot held at less than 135 degrees Fahrenheit or above. Chicken Sausage 125°f stored in the warmer, spoke to Employee concerning temperature, must be maintain.
35A-02-5    High Priority - Live, small flying insects in kitchen, food preparation area, or food storage area. Observed in the server side station, recommend Manager notify current pest control service.
03A-02-4    High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Cut melons 44°f stored inside reach in cooler **Corrective Action Taken** **Repeat Violation**
