Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

01B-07-4    High Priority - Food with mold-like growth. See stop sale. 1 moldy lemon stored inside produce bin inside walk in cooler. **Corrected On-Site**
05-01-4    High Priority - Glass stem/sensor thermometer in use with no shatterproof coating. Observed in grill area **Corrected On-Site**
35A-02-5    High Priority - Live, small flying insects in kitchen, food preparation area, or food storage area. Observed in the bakery area and dishmachine room. **Repeat Violation**
03A-02-4    High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Chopped chicken 47°f, deli ham 48°f stored inside reach in cooler locate in bakery area. Chef removed all food from cooler **Corrective Action Taken**
41-11-4    High Priority - Toxic substance/chemical stored by or with single-service items. Sanitizer bucket stored with plastic to go container dessert area. **Corrected On-Site**
22-24-4    Intermediate - Accumulation of black/green mold-like substance on/around soda dispensing nozzles. Beverage island body of soda machine very sticky.
14-74-5    Intermediate - Cold holding equipment not maintained in good repair. Do not store potentially hazardous (time/temperature control for safety) food in this unit until the unit is repaired. Ambient temp 50°f inside cooler located in the bakery area.
22-06-4    Intermediate - Slicer blade soiled with old food debris. Observed old food residue on the back of the blade **Repeat Violation**
