Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Cloth used as a food-contact surface. Observed cloth being used as a food contact surface at steam table. Observed cloth towel at bin under cooked rice. **Warning**
High Priority - Basic - Food placed in soiled container/equipment. Observed approximately 100 rodent droppings at dry storage area on shelves, on top of boxes of food, on cans of food, on lids of food storage containers and on floor. Per operator, establishment receives professional pest control treatments. Last professional pest control treatment occurred at approximately 4am on the day of the inspection. **Warning**
Basic - In-use utensil not stored on a clean portion of food preparation or cooking equipment. Observed clean utensils stored in bin with droppings. Advised operator to wash and sanitize dishes and clean and sanitize bins. **Warning**
Basic - In-use utensil stored in standing water less than 135 degrees Fahrenheit. Observed ice cream scoop on back preparation table stored in room temperature water. **Warning**
High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. At cook line, proximal to fryers on ice, observed egg wash out of temperature. Advised operator to use more ice at container or to utilize time as public health control measure rather than temperature if cold holding issues persist. Advised how to use time as public health control and forwarded operator literature to operator explaining time as public health control use via email. Observed refrigerated ice cream mix at bar out of temperature. Advised operator to place dairy mix at cooler capable of effective cold holding. Observed approximately 100 rodent droppings at dry storage area on shelves, on top of boxes of food, on cans of food, on lids of food storage containers and on floor. Intermediate - Establishment not maintaining clam/mussel/oyster tags for 90 days. Unable to observe tags as they were in an inaccessible office at time of the inspection. **Warning**
Intermediate - Torn packages/bags of food exposing the contents to contamination. Observed bags of tortilla chips and bags of pasta at dry storage area open. Opening appear to be chew marks. See stop sale. **Warning**
