Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

14-01-4    Basic - Bowl or other container with no handle used to dispense food. Observed that a plastic cupp with no handle was being used as a scoop for black pepper. The cup was discarded. **Corrective Action Taken**
24-08-4    Basic - Equipment and utensils not properly air-dried - wet nesting. Observed that food pans are stacked wet on shelving in the ware washing area. **Repeat Violation**
35B-01-4    Basic - Exterior door has a gap at the threshold that opens to the outside between the men's and women's bathrooms and the rear door of the kitchen. **Repeat Violation**
36-12-4    Basic - Floors not cleaned under the weekend grill. Observed charcoal and grease under this grill.
14-13-4    Basic - Food-contact surface not smooth and easily cleanable. Observed multiple chipped ceramic plates are in use.
36-14-4    Basic - Grease and food debris accumulated on kitchen floor under the deep fat fryer.
36-47-5    Basic - Hood above the weekend grill is soiled with accumulated grease, dust or food debris. . **Repeat Violation**
10-12-4    Basic - In-use ice scoop stored on soiled surface between uses. Observed that the sop for the ice machine is stored directly on top of the ice machine. The scoop was put in the ware washing area. **Corrective Action Taken**
10-07-4    Basic - In-use utensil stored in standing water less than 135 degrees Fahrenheit. Observed in use serving spoons and a large fork in a container of standing water with a temperature of 121ÿ°F. **Repeat Violation**
21-04-4    Basic - In-use wet wiping cloth/towel used under cutting board in a prep area. The cloth was removed. **Corrected On-Site**
05-09-4    Basic - No conspicuously located ambient air temperature thermometer in the Pepsi dessert reach-in cooler.
51-18-6    Basic - No copy of latest inspection report available.
33-16-4    Basic - Open dumpster lid. **Repeat Violation**
14-20-4    Basic - Ripped/worn tin foil used as food-contact shelf cover in the ware washing area.
08B-13-4    Basic - Stored food not covered in walk-in cooler. Observed 4 containers of prepped vegetables that are not covered in the walk-in cooler. They were immediately covered. **Corrected On-Site**
29-11-4    Basic - Water leaking from pipe under the hand wash sink next to the grills.
22-41-4    High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed 0 ppm when tested. Observed sanitizer bucket is empty. The sanitizer bucket was replaced with a full one and the sanitizer retested at 50 ppm.
12A-07-4    High Priority - Employee failed to wash hands before changing gloves and/or putting on gloves to work with food. Observed a cook putting on gloves without washing hands first. The Mgr. corrected this cook and he removed the gloves, washed hands and put on a new pair of gloves. **Repeat Violation**
03D-05-4    High Priority - Potentially hazardous (time/temperature control for safety) food cooked/heated yesterday/on a previous day not cooled from 135 degrees Fahrenheit to 41 degrees Fahrenheit within a total of 6 hours. Food has been cooling overnight. See stop sale. Observed a large pot of cooked whole red potatoes, that were cooked on 1/9/17 are still 51-60ÿ°F in the walk-in cooler. **Repeat Violation**
08A-10-4    High Priority - Raw animal food stored over ready-to-eat food in reach-in cooler. Observed raw beef and raw sausage stored above sauces and sliced pineapple in a reach-in cooler. All the food was properly restored with RTE food above the raw meats. **Corrected On-Site**
22-05-4    Intermediate - Cutting board(s) stained/soiled. Observed a black mold-like substance on 2 yellow cutting boards.
27-16-4    Intermediate - Hot water not provided/shut off at employee handwash sink next to the grills. The hot water was restored. **Corrected On-Site**
16-35-4    Intermediate - No chlorine chemical test kit provided when using chlorine sanitizer at three-compartment sink/warewashing machine.
31B-02-4    Intermediate - No paper towels or mechanical hand drying device provided at handwash sink next to the grills. Paper towels were placed at this sink. **Corrected On-Site** **Repeat Violation**
31B-03-4    Intermediate - No soap provided at handwash sink in a prep area. **Repeat Violation**
22-07-4    Intermediate - Observed both slicer blade guards are soiled with old hard drive-up cheese. **Repeat Violation**
03D-20-4    Intermediate - Potentially hazardous (time/temperature control for safety) food cooled in quantity deeper than 4 inches. Observed cooling cooked whole red potatoes in a large pot approximately 14âAEA? deep that were not properly cooled in the walk-in cooler.
