Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

13-04-4    Basic - Employee with no beard guard/restraint while engaging in food preparation. Cook preparing food. **Warning**
13-03-4    Basic - Employee with no hair restraint while engaging in food preparation. Manager removing food from a reach-in cooler. **Warning**
24-08-4    Basic - Equipment and utensils not properly air-dried - wet nesting. Observed food pans are stacked wet on shelving. **Warning**
36-22-4    Basic - Floor area(s) covered with standing water on the cooks line. **Warning**
36-71-4    Basic - Floor drains/drain covers heavily soiled in the dishwashing room. **Warning**
10-17-4    Basic - In-use knife/knives stored on a soiled surface next to the cook line egg cooler between uses. **Warning**
10-07-4    Basic - In-use utensil stored in standing water less than 135 degrees Fahrenheit. Observed 2 scoops stored in a container of standing water with a temperature of 108°F on the expo line. **Warning**
10-03-4    Basic - In-use utensil used with moist food stored in running water with insufficient velocity to flush food particles away in the expo/drink area. Dripper well is turned off. **Warning**
22-19-4    Basic - Microwave oven soiled with rust on the cooks line. . **Warning**
31B-04-4    Basic - No handwashing sign provided at a hand sink used by food employees in the only bathroom. **Warning**
14-33-4    Basic - Reach-in cooler with rust that has pitted the surface. Observed the interior of the salad reach-in cooler is rusty. **Warning**
36-72-4    Basic - Walk-in cooler floor soiled under shelving **Warning**
03A-15-4    High Priority - All potentially hazardous (time/temperature control for safety) foods in reach-in cooler cold held at greater than 41 degrees Fahrenheit. Observed all food in 1 door reach-in cooler with 2 drawers on the cooks line is above 60°F. Food was stored in this cooler overnight or longer. See stop sale. Also observed all food in cold table #1 on the cooks line is above 45°F. Some of the food was moved to the walk-in cooler and some food stored overnight in this unit was put on a stop sale. **Warning**
22-41-4    High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed 0 ppm when tested. Employee primed machine and it retested at 50 ppm. **Corrected On-Site** **Warning**
12A-04-5    High Priority - Employee handled soiled dishes or utensils and then handled clean dishes or utensils without washing hands. Observed the dishwasher handle soiled dishes then clean without washing hands. **Warning**
10-05-4    High Priority - In-use utensil stored in unclean water at or above 135 degrees Fahrenheit on the cooks line. **Warning**
22-02-4    Intermediate - Accumulation of food debris/grease on food-contact surface on a flat top grill on the cooks line. **Warning**
14-79-5    Intermediate - Cold buffet not maintained in good repair. Do not store potentially hazardous (time/temperature control for safety) food in this unit until the unit is repaired. Observed all food in 1 door reach-in cooler with 2 drawers on the cooks line is above 60°F. Food was stored in this cooler overnight or longer. See stop sale. **Warning**
03D-15-4    Intermediate - Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Observed hash brown potatoes were 85-92°F at 08:45am in closed containers in the walk-in cooler. At 09:48am observed the same hash brown potatoes were 83-91°F still in closed containers in the walk-in cooler. **Warning**
22-28-4    Intermediate - Interior of biscuit warmer drawer soiled with accumulation of food residue on the expo line. Interior of cold table unit # 1 is soiled with food debris. **Warning**
51-16-5    Intermediate - No plan review submitted and approved - renovations were made or are in progress. Must submit plans, plan review application and payment for plan review to DBPR H and R Plan Review office located at 2601 Blair Stone Rd., Tallahassee, FL 32399-1011. Observed remodel in progress and no plan review has been submitted. A dining area and bathroom are in the process of a remodel. Observed a seating counter and equipment have been removed from the dining areas. The men's bathroom is closed and all fixtures removed. Call 850-487-1395, ask for plan review if you have questions on how to submit plan review. **Warning**
31B-03-4    Intermediate - No soap provided at one handwash sink in the only bathroom. **Warning**
03D-20-4    Intermediate - Potentially hazardous (time/temperature control for safety) food cooled in quantity deeper than 4 inches. Observed hash brown potatoes being cooled in closed cardboard containers approximately 8" deep in the walk-in cooler. **Warning**
03D-16-4    Intermediate - Potentially hazardous (time/temperature control for safety) food covered while cooling. Observed hash brown potatoes were 85-92°F at 08:45am in closed containers in the walk-in cooler. 41-17-4    Intermediate - Spray bottle containing unknown toxic substance not labeled on a prep area on the cooks line. The bottle was moved to chemical storage. **Corrective Action Taken** **Warning**
