A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Case/container/bag of food stored on floor in walk-in cooler/freezer.

High Priority - Live, small flying insects in kitchen, food preparation area, or food storage area.
Observed three to four flies in kitchen area. **Repeat Violation** **Warning**
High Priority - Potentially hazardous (time/temperature control for safety) hot held at less than 135 degrees Fahrenheit or above.
Chicken wings (74°F - Hot Holding) next to fry vats. Employee stated that the wings had been out approximately 45 min. Discussed using time as public health. Employee moved chicken to walk-in cooler. **Corrective Action Taken** **Repeat Violation** **Warning**
High Priority - Rodent activity present as evidenced by rodent droppings found.
Prep table: Observed two soft droppings on table across from fry vats.
Front counter: Observed one soft dropping on floor next to drive thru window.
Dish-wash/storage area: Observed approximately seven hard droppings under the food storage shelves and one soft dropping in corner next to hand wash sink. **Warning**
High Priority - Single-use gloves not changed as needed after changing tasks or when damaged or soiled.
Employee touched pants and returned to using clean utensils without changing gloves. Discussed proper glove use. **Warning**
Intermediate - No chlorine chemical test kit provided when using chlorine sanitizer at three-compartment sink/warewashing machine. **Repeat Violation** **Warning**
