which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.

Observed potentially hazardous food being cold held at temperatures greater than 41°F at reach in coolers on cook line. At single door hooded reach in cooler on cook line observed ambient air temperature at 50°F. Observed the following temperatures: diced ham; Pork (43°F - Cold Holding) goat cheese; Dairy (45-47°F - Cold Holding) raw shelled eggs; Poultry (55°F - Cold Holding). At quadruple drawer reach in cooler on cook line observed the following temperatures: raw comminuted beef; Beef (46°F - Cold Holding) corn beef hash ; Beef (46°F - Cold Holding). Operator assessed ice to food at units. **Corrective Action Taken** **Repeat Violation** **Warning** - From follow-up inspection on 2017-07-03: Observed potentially hazardous food being cold held at temperatures greater than 41°F at reach in coolers on cook line. At single door hooded reach in cooler on cook line observed ambient air temperature at 53°F. Observed the following temperatures: raw shelled eggs 56°F, feta cheese 51°F, shredded monetary jack and cheddar cheese 49°F.
