A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Attached equipment soiled with accumulated dust, grease, or food debris. Exhaust fans located on the back wall have heavy grease and dust build up.
Basic - Dead roaches on premises. Approximately 32 dead roaches observed under the three compartment sink, behind the up right freezer, on the floor under the dry storage shelving and on the floor in the wait area. **Repeat Violation**
Basic - Lights in food preparation, food storage or warewashing area missing the proper shield, sleeve coatings or covers. Lights above the microwave in the kitchen.
Basic - Wiping cloth sanitizing solution stored on the floor. Kitchen and wait area. Placed on milk crates during this inspection. **Corrected On-Site**
High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. 0 ppm
High Priority - Roach activity present as evidenced by live roaches found.
One live roach observed in the box of the plastic wrap and approximately twelve live observed under the drain board board of the dish wash machine. **Repeat Violation**
Intermediate - No paper towels or mechanical hand drying device provided at handwash sink. Kitchen hand wash sink. Replaced during this inspection. **Corrected On-Site**
Intermediate - Ready-to-eat, potentially hazardous (time/temperature control for safety) food prepared onsite and held more than 24 hours not properly date marked. Macaroni and Cheese in the reach in cooler and soups in the upright freezer.
