A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Bowl or other container with no handle used to dispense food. Observed in a container of flour, on shelving near reach in cooler in back kitchen area.
Basic - Build-up of grease on nonfood-contact surface. Observed on kitchen equipment at the cookline, particularly the reach in cooler drawers that are not being used.
Basic - Dishmachine not washing/rinsing properly. Must wash, rinse and sanitize all dishware, equipment and utensils in three-compartment sink until dishmachine is functioning properly. Observed dishwasher in ware washing area not properly sanitizing. Tested dishwasher using chlorine test strips at 0ppm.
Basic - Food stored on floor. Observed boxes of pasta and tea bags stored on the floor in the main back kitchen area, as well as on the floor of the walk in freezer.
Basic - Observed standing water in bottom of reach-in cooler. Observed in the bottom reach in cooler, in front of fryer station/cookline, operator removed water.
Basic - Single-service articles improperly stored. Observed boxes food containers on floor, in front of door leading to office. Operator removed. **Corrected On-Site**
Basic - Working containers of food removed from original container not identified by common name. Observed white plastic containers under prep counter used to store sauce.
High Priority - Dented/rusted cans present. See stop sale. Observed a dented 6lbs can of cheddar cheese sauce on shelving near three compartment sink. Operator removed. **Corrected On-Site**
High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Observed ;sliced turkey (48°F - Cold Holding) and spaghetti noodles (55°F - Cold Holding), located top reach in cooler, near to entranceway leading into kitchen, were salads are prepped. Instructed operator to place into reach in cooler. **Corrective Action Taken**
High Priority - Raw animal food stored over or with ready-to-eat food in reach-in freezer - not all products commercially packaged.Observed an open package of raw breaded chicken tenders stored on top of open packages of fries and mozzarella sticks in reach in freezer. Operator in the process of removing. **Corrective Action Taken**
Intermediate - No chlorine chemical test kit provided when using chlorine sanitizer at three-compartment sink/warewashing machine. None provided for testing dishwasher machines at the time of the inspection.
Intermediate - No quaternary ammonium chemical test kit provided when using quaternary ammonium chemical sanitizer at three-compartment sink/warewashing machine. None observed for testing sanitizer bucket at the time of the inspection.
