Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

38-12-4    Basic - Light shield for lights in food preparation, food storage or warewashing area missing end caps. Lights located in kitchen.

35B-03-4    Basic - Outer openings not protected with self-closing doors.

14-33-4    Basic - Reach-in cooler shelves with rust that has pitted the surface.
23-14-4    Basic - Shelf under preparation table soiled with food debris.
23-09-4    Basic - Soiled reach-in cooler gaskets.
42-05-5    Basic - Storage of tools on shelf above or with clean equipment and utensils, single service items, and/or clean linens. Observed hammer by mixer.
14-41-4    Basic - Walk-in cooler gasket torn/in disrepair.
23-10-4    Basic - Walk-in freezer gaskets soiled with slimy/mold-like build-up.
29-11-4    Basic - Water leaking from pipe and/or faucet/handle. Observed leaks from faucet on hand sink in kitchen and three compartment sink.
42-01-4    Basic - Wet mop not stored in a manner to allow the mop to dry.
02D-01-5    Basic - Working containers of food removed from original container not identified by common name. Located in bakery section of kitchen.
12A-07-4    High Priority - Employee failed to wash hands before changing gloves and/or putting on gloves to work with food. Observed operator putting gloves on without washing hands.

22-02-4    Intermediate - Accumulation of food debris/grease on food-contact surface. Observed build up of debris on mixing equipment in bakery section of kitchen.
31A-09-4    Intermediate - Handwash sink not accessible for employee use at all times. Hand sink located by front counter is blocked by storage racks.
22-28-4    Intermediate - Interior of reach-in cooler soiled with accumulation of food residue.
14-77-5    Intermediate - Reach-in cooler not maintained in good repair. Do not store potentially hazardous (time/temperature control for safety) food in this unit until the unit is repaired. Observed both reach in coolers not keeping proper temperatures. Ambient temperature in reach in cooler under prep table at 60°. Ambient temperature in reach in cooler at sandwich station at 58°. Rechecked both units 20 minutes later and no change in temperature.
