Violations:
A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Bowl or other container with no handle used to dispense food. Observed plastic take out bowls/containers are being used as scoops for sauces. **Warning**
Basic - Employee with no hair restraint while engaging in food preparation. Observed 8 kitchen employees not wearing any hair restraints. They all put on hats. **Corrected On-Site** **Warning**
Basic - In-use rice scoop/spoon stored in standing water less than 135 degrees Fahrenheit. The water temperature was 71F. The water was dumped. **Corrective Action Taken** **Warning**
Basic - Stored food not covered in walk-in freezer. Observed multiple pans of food in a walkin freezer are not covered. **Repeat Violation** **Warning**
High Priority - Raw animal food stored over cooked food. Observed raw tripe stored above cooked shrimp in a reachin cooler. The shrimp was moved above the tripe. **Corrected On-Site** **Warning**
High Priority - Raw animal food stored over or with ready-to-eat food in walk-in freezer - not all products commercially packaged. Observed raw pork any raw beef stored above cooked foods in the North walkin freezer. **Warning**
High Priority - Raw animal foods not properly separated from one another based upon minimum required cooking temperature in walk-in freezer - all products not commercially packaged. Observed raw chicken over raw pork, raw pigs feet and raw beef over raw fish in the north walkin freezer. **Warning**
High Priority - Raw meat/poultry cold held at greater than 41 degrees Fahrenheit. Observed 30 raw partially cooked ducks hanging in the kitchen at 66-68F. **Warning**
High Priority - Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Observed well over 200 ppm chlorine sanitizer when tested. It was corrected to 100 ppm. **Corrected On-Site** **Warning**
Intermediate - Manager lacking proof of food manager certification. A list of accredited food manager certification examination providers can be found at http://www.myfloridalicense.com/dbpr/hr/food-lodging/managercertification.html. Mandy Pan the General Manager is not a Certified Food Manager. **Warning**
