A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - In-use utensil stored in standing water less than 135 degrees Fahrenheit. Observed ice cream scoops in standing water below 135°F.operator removed. **Repeat Violation**
Basic - In-use utensil used with moist food stored in running water with insufficient velocity to flush food particles away. Observed dipperwell not turned on. Operator turned on water. **Corrected On-Site**
High Priority - Employee handled soiled dishes or utensils and then handled clean dishes or utensils without washing hands. Observed dishwasher handle soiled dishes then clean without washing hands. **Repeat Violation**
High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Observed lettuce in the salad bar reach-in cooler is 47-48°. The lettuce was moved to another cooler. There were no other items in this cooler. Observed food in the butter bar reachin cooler is 47°F or warmer. High Priority - Potentially hazardous (time/temperature control for safety) food cooked/heated yesterday/on a previous day not cooled from 135 degrees Fahrenheit to 41 degrees Fahrenheit within a total of 6 hours. Food has been cooling overnight. See stop sale. Observed that rehydrated hash brown potatoes, prepared on 11/5/17, were still 45-50°F in 6 closed containers approximately 9" deep in the walk-in cooler . **Repeat Violation**
High Priority - Stop Sale issued on potentially hazardous (time/temperature control for safety) food due to temperature abuse. Improperly cooled hash browns.
Intermediate - No plan review submitted and approved - renovations were made or are in progress. Must submit plans, plan review application and payment for plan review to DBPR H and R Plan Review office located at 2601 Blair Stone Rd., Tallahassee, FL 32399-1011. Originally cited this violation on 4/25/17. At today's post conference inspection, observed that a drink station with a hand sink has been removed from a dining room. **Repeat Violation** **Admin Complaint**
