Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

36-73-4    Basic - Floor soiled/has accumulation of debris. Debris under equipment and tables in back storage room. Debris under equipment on cook line and in dish area.
23-07-4    Basic - Gaskets with slimy/mold-like build-up. On gasket on reach in cooler on cook line, on reach in freezer in prep area.
22-19-4    Basic - Interior of microwave soiled with encrusted food debris. On both microwaves in kitchen area.
06-04-4    Basic - Potentially hazardous (time/temperature control for safety) food thawed at room temperature. Beef in prep sink in back prep area.
28-14-4    High Priority - Evidence of mop/cleaning wastewater dumped onto ground. Area around corner from dry storage shed near mop sink. Mop bucket and mops stored. Excessive amount of debris on ground in same area. Around pipes and on ground.
08A-05-4    High Priority - Raw animal food stored over ready-to-eat food. Raw beef liver stored on shelf above cheese and bread in glass reach in cooler on cook line. Item moved during inspection. **Corrected On-Site**
29-34-4    High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Missing on mop sink in outside area. Item placed on faucet during inspection. **Corrected On-Site** **Repeat Violation**
22-28-4    Intermediate - Interior of reach-in cooler soiled with accumulation of food residue. Inside of reach in cooler in storage shed. Also, buildup inside of reach in freezer in prep room.
53A-05-5    Intermediate - No currently certified food service manager on duty with four or more employees engaged in food preparation/handling. 53B-13-5    Intermediate - Proof of required state approved employee training not available for some employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. 1 employee working in kitchen with no proof training on site. Employee working since last inspection in august.
02C-02-4    Intermediate - Ready-to-eat, potentially hazardous (time/temperature control for safety) food prepared onsite and held more than 24 hours not properly date marked. Beans, cooked beef in reach in cooler in back prep area.
