Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

16-46-4    Basic - Old labels stuck to food containers after cleaning. Old labels on exterior of cleaned pans.
35B-03-4    Basic - Outer openings not protected with self-closing doors. Rear door not self closing. **Repeat Violation**
33-31-5    Basic - Unnecessary items/unused equipment on the premises. Old equipment: old ice cream dispensing units/ machines in rear of kitchen.
29-11-4    Basic - Water leaking from pipe and/or faucet/handle. Leaking faucet at Three compartment sink.
21-12-4    Basic - Wet wiping cloth not stored in sanitizing solution between uses. 2 wet wipes on counter in : kitchen.
12A-07-4    High Priority - Employee failed to wash hands before changing gloves and/or putting on gloves to work with food. Employee handled kitchen equipment then put on gloves without washing hands.
12A-04-5    High Priority - Employee handled soiled dishes or utensils and then handled clean dishes or utensils without washing hands. Employee handled kitchen equipment then handled single-service to go containers without washing hands.
03C-15-4    High Priority - Gyro meat sliced from cone cooking on rotisserie did not undergo a secondary cook step to ensure all parts, internal and external, reach a minimum temperature of 155 degrees Fahrenheit or equivalent time/temperature combination as specified in cooking chart. Gyro meat on rotisserie was sliced then offered to customer. Item was at 138°F . Food was reheated to 170°F **Corrective Action Taken**

31B-02-4    Intermediate - No paper towels or mechanical hand drying device provided at handwash sink. No paper towels at Hand Wash Sinks.
