Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

08B-45-4    Basic - Case/container/bag of food stored on floor in walk-in cooler/freezer. Container of peperoncini stored on floor in WIC. Case of cauliflower stored on floor in WIF. Open bag of sugar stored on shelf beneath prep table.
24-08-4    Basic - Equipment and utensils not properly air-dried - wet nesting. Single service containers not inverted on shelf above prep table.
35B-01-4    Basic - Exterior door has a gap at the threshold that opens to the outside. Exterior door not self closing.
36-01-4    Basic - Floor not cleaned when the least amount of food is exposed. Under all equipment and shelving. Floor drains soiled.
29-20-5    Basic - Standing water or very slow draining water in mop sink.
02D-01-5    Basic - Working containers of food removed from original container not identified by common name. Salt container near fryer. **Repeat Violation**
09-01-4    High Priority - Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Employee helped Cook cutting and measuring pizza dough- no handwash- no gloves.
41-10-4    High Priority - Toxic substance/chemical improperly stored. Spray bottle of disinfectant stored on prep table. Spray bottle of disinfectant not labeled.
22-20-4    Intermediate - Accumulation of black/green mold-like substance in the interior of the ice machine. Microwave soiled. Soda machine soiled. Ice bin near soda machine soiled. Can opener soiled. **Repeat Violation**
12A-01-4    Intermediate - Employee applied hand antiseptic in place of washing hands as required. Server used antiseptic instead of handwash.
31B-02-4    Intermediate - No paper towels or mechanical hand drying device provided at handwash sink. Wait station. No soap. Wait station **Repeat Violation**
02C-04-4    Intermediate - Operator is not properly tracking/marking the number of days ready-to-eat, potentially hazardous (time/temperature control for safety) food prepared onsite was held at refrigeration temperatures prior to freezing in order to properly date mark the food when it is thawed and held at refrigeration temperatures again. Milk and heavy cream in a RIC not date marked. **Repeat Violation**
