Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

22-41-4    High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Chlorine at 0ppm for main dishwasher. Bucket was empty and operator did not notice. Changed bucket and primed machine. Corrected to 50ppm. Placed dishes back in for another cycle. **Corrected On-Site** **Warning**
35A-02-5    High Priority - Live, small flying insects in kitchen, food preparation area, or food storage area. 1 live in the bar. 2 live flies in the kitchen area. 1 live in the wait station. 2 dead in the prep area shelving. Employee cleaned and sanitized the areas. **Warning**
03A-02-4    High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Cook line drawers under grill: shrimp (45°F) as per operator statement the item was only there for 3 hours. Moved to cool. At end of inspection now 39°F. Chicken breast 3 pounds (46-47°F); cooked chicken 5 pounds (46-49°F) as per employee statement these items were in this location overnight. See stop sale. Front counter ice bath: Cole slaw (51°F); diced tomatoes (52°F). As per employee statement the items were only out for 30 minutes. Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit.
