Violations:
A summary of the violations found during the inspection are listed below. The department cites violations of Florida's sanitation and safety laws, which are based on the standards of U.S. Food and Drug Administration's Food Code. High Priority violations are those which could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Intermediate violations are those which, if not addressed, could lead to risk factors that contribute to foodborne illness or injury. These violations include personnel training, documentation or record keeping and labeling. Basic violations are those which are considered best practices to implement. While most establishments correct all violations in a timely manner (often during the inspection), the division's procedures are designed to compel compliance with all violations through follow-up visits, administration action or closure when necessary.

38-01-4    Basic - Light shield damaged/in disrepair in food dry storage room near soda dispensers. **Warning**
29-49-5    Basic - Observed standing water in bottom of reach-in cooler in bar at bar entrance. **Warning**
02D-01-5    Basic - Working containers of food removed from original container not identified by common name. Observed in food dry storage room with large container of salt on shelf, manager labeled it. **Corrected On-Site** **Warning**
22-41-4    High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed at 0ppm, changed to 100ppm with quaternary ammonia sanitizer by manager after running 4 times. It should be 200ppm for quaternary ammonia sanitizer. It should be 50-100ppm for chlorine sanitizer. **Warning**
12A-29-4    High Priority - Employee touched soiled surface and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Observed manager handle headphones and cell phone and then handled boxes of chicken and single service papers for fries. 08A-01-4    High Priority - Raw animal food stored over cooked food. Observed raw bacon stored above cooked hot dogs in walk in cooler, manager properly stored foods. **Corrected On-Site** **Warning**
02C-02-4    Intermediate - Ready-to-eat, potentially hazardous (time/temperature control for safety) food prepared onsite and held more than 24 hours not properly date marked. Observed with cooked sweet potato in walk in cooler, chef properly dated it. **Corrected On-Site** **Warning**
