A summary of the violations found during the inspection are listed below.
The department cites violations of Florida's sanitation and safety laws,
which are based on the standards of U.S. Food and Drug Administration's Food Code.
High Priority violations are those which could contribute directly to a foodborne
illness or injury and include items such as cooking, reheating, cooling and hand-washing.
Intermediate violations are those which, if not addressed, could lead to risk factors
that contribute to foodborne illness or injury. These violations include personnel training,
documentation or record keeping and labeling. Basic violations are those which are considered
best practices to implement. While most establishments correct all violations in a timely
manner (often during the inspection), the division's procedures are designed to compel
compliance with all violations through follow-up visits, administration action or closure
when necessary.
Basic - Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Observed personal drinking cup on preparation table. Cup removed. **Corrected On-Site** **Repeat Violation**
High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit. Observed cooked black beans at 52°f and cooked chicken at 48°f in reach in cooler. No other TCS foods observed inside.Cooked beans and cooked chicken were moved to a reach in freezer. **Corrective Action Taken**
High Priority - Single-use gloves not changed as needed after changing tasks or when damaged or soiled. Observed employee breaking raw shelf eggs them touch ready to eat bread bread. After being told employee washed hands and changed gloves. **Corrected On-Site**
Intermediate - Handwash sink not accessible for employee use due to items stored in the sink. Observed water pitcher in kitchen's hand sink. Pitcher removed. **Corrected On-Site**
Intermediate - Handwash sink used for purposes other than handwashing. Observed employee rinsing utensils in cooking area hand sink. Manager let employee know that hand sinks are only for hand washing. **Corrective Action Taken**
Intermediate - No plan review submitted and approved - renovations were made or are in progress. Must submit plans, plan review application and payment for plan review to DBPR H and R Plan Review office located at 2601 Blair Stone Rd., Tallahassee, FL 32399-1011. Observed 3 compartment sink and hand sink removed from designated location and added to a different area. Changes must be shown on new plans. Intermediate - Reach-in cooler not maintained in good repair. Do not store potentially hazardous (time/temperature control for safety) food in this unit until the unit is repaired. Observed the black beans at 52°f and cooked chicken at 48°f. No other TCS foods observed inside.
